Description The taste is in the name. Les Ammonites takes its name from the fossilised sea life embedded in the limestone slopes of Rotalier, and closes your eyes and you could be somewhere entirely coastal. Peggy and Jean-Pascal Buronfosse left city life behind in 1999, landed in Jean-François Ganevat’s village, and with his guidance gradually found their way to producing some of the most quietly brilliant wines in the Jura. Reductive on the nose, lemon and marzipan with a subtle oxidative thread adding intrigue and complexity. Full of energy on the palate, lemon and stone fruit with a rasping, salt-tinged acidity creaming through to a long, salty finish.
