Description Aromas of very ripe white fruit and lemon lead into a smooth, saline palate with real depth and tension. This is Chenin Blanc at its most expressive, dry and precise with a long, mineral finish. Try it with river fish, roasted chicken, soft cheeses or simply on its own with some time to open up in the glass. Les Terres Blanches is a small, passionately run biodynamic estate in the Thouarsais region of Deux-Sèvres, at the gateway to Anjou. Founded in 2004, the estate is made up of a constellation of small plots across almost 12 hectares, farmed according to organic and biodynamic principles and guided by the lunar calendar. The estate is as much a smallholding as a winery, with a Poitevin draft horse, a flock of sheep and a network of local suppliers all part of a genuine closed-loop farming philosophy. Les Trois Poiriers comes from the second sorting of golden grapes selected from the estate’s 5 hectares of Chenin Blanc, harvested in multiple passes over the course of a month to capture different stages of ripeness. The sandstone soils here give the wine its density while preserving freshness and tension. Grape: Chenin Blanc. Vin de France, Thouarsais. Certified biodynamic. Grapes harvested by hand in multiple passes. Juice flows entirely by gravity into 350-litre Burgundy barrels with no settling or pumping, fermented with indigenous yeasts. Malolactic fermentation carried out. Bottled at the estate.
