Description Zanotto Wild Col Fondo is a naturally sparkling Glera from the Veneto, made by the ancient col fondo method in which the wine referments in bottle and rests on its lees rather than being disgorged. Hazy and alive in the glass, with a gentle, persistent fizz and a nose of fresh pear, green apple, and a subtle yeasty complexity from the lees contact. The palate is dry, textured, and refreshing, with a slight savouriness and mineral quality that sets it apart from conventional Prosecco. Serve straight from the fridge, upright to leave the sediment undisturbed, or give it a gentle swirl to bring everything into suspension for a wilder, cloudier pour. Riccardo Zanotto works with organically and biodynamically farmed fruit in the Veneto, with col fondo sparkling wine at the heart of his project. His intention is to make wines that carry the stories and character of the territory directly into the glass. Col fondo is the original Prosecco method, predating the pressurised tank approach that now dominates the region. The must spends three to four days in contact with skins before the first fermentation, adding texture and a faint tannic grip before the wine is bottled for its secondary fermentation.
