Description Flinty, precise, and unapologetically Chablis. Green apple, white grapefruit, and a squeeze of lemon on the nose alongside white blossom and a chalky mineral undercurrent that is the hallmark of this corner of Burgundy. The palate is lean and focused, with bright citrus acidity driving a clean, dry finish that lingers with that characteristic wet stone quality. Nine months on the fine lees adds just enough texture to give the wine some presence without softening its essential steeliness. Serve well chilled alongside salmon en croute, trout with dill and cream, or a light summer salad. Domaine Seguinot-Bordet has been farming the right bank of the Serein river since 1590, with 19 hectares of south and southeast-facing vines that are ideally positioned to ripen fruit fully in this northerly climate. The domaine is currently in the hands of Jean-Francois Bordet, who oversees all viticultural decisions with a particular focus on careful canopy management and selective harvesting. Chablis sits at the northern edge of Burgundy, roughly 100 miles south of Paris, and its limestone and chalk soils give the Chardonnay a character entirely distinct from anything produced further south. No oak, no butter, no generosity of the Cote de Beaune. What Chablis does is precision, and at village level this is a reliable and honest expression of what that means. Jean-Francois favours a cool fermentation approach to preserve aromatic freshness, with lees contact over two to five months building in roundness to the mouthfeel. The full nine months on fine lees lifts this above the thinner end of village-level Chablis without compromising the appellation’s signature mineral drive. 12.5% / 75cl
